Maize stalks

Harvest time came to St. Clare Centre this year after a plentiful growing season, the best in years. Everyone is so excited and grateful. One of the crops grown is maize. The maize is allowed to dry on the stalks in the field. Then the girls go out into the fields in their family groups and remove the cobs and shuck them, putting the cobs in a pile to dry further.

From here, the kernels are removed by a machine and placed in the sun again to thoroughly dry. The final step involves taking the dry kernels to a mill where they are ground into maize flower, a major ingredient in the Kenyan diet.
